What we think

The 12th century monks who once toiled in this Romanesque abbey would be gobsmacked by their former residence today: it combines transcendent beauty with pure luxury. Every single room option is cinematic, from the 323 square foot Classic Double Room (with stone mosaic tile-lined bathrooms, oak floors and custom walnut furniture) to the Master Suite, where exposed wood ceiling beams, a carrera marble lined bath and balcony that peers out on the rolling vineyards lend the 1,076 square foot space a particularly “when in Spain” feel. Whichever room you choose, expect perks galore—ranging from gratis welcome amenities to a Nespresso machine and curated minibar you can raid at your leisure.

The hotel’s Michelin-starred restaurant, Refectorio, is worth the trip alone, with dishes like beetroot with shrimp from Medina del Campo; suckling lamb from Olmedo; and pine nut semifreddo for dessert.

Refectorio - Endorsed by a Michelin star, two Repsol Suns and a Green star, Refectorio delights with impeccable cuisine based on classics, but exuding avant-garde and personality. It is guided by the seasonal product, with special prominence of the local pantry, of the area's product served by a local supplier, and of course, the wine serves as inspiration.

Vinoteca - Vinoteca presents a menu linked to local and area products, designed for sharing and where it is possible to taste up to 40 wine references. A simple, light, but sophisticated experience.

The Yard of Cloister - A space full of history to which the culinary proposal of Vinoteca is transferred and where you can also enjoy our à la carte breakfast. A space that combines the best gastronomy with a unique architectural and natural environment.

Calicata Terroir Bar - A unique open-air space surrounded by vineyards and pine forests that gives customers the opportunity to round off their visit to our winery and farm with a gastronomic proposal linked to local produce, from our own orchards and from producers from the area.
