What it isn't
Stodgy. Yes, this is a classic—having opened as a luxe glamping resort way back in 1915 for Grand Trunk Pacific Railway guests—but all rooms and cabins have been recently revamped.
What we think
Icons are iconic for a reason. Fairmont Jasper Park Lodge fits the word “legend” to a tee, from glamorous former guests (Marilyn Monroe) to current jaw-dropping amenities (one of the top spas in all of North America). We particularly love that the rooms and cabins—most with mountain views—are cozy as can be, but not so over-the-top that you don’t want to go exploring the adventure-rich forests and lake beyond your windows. Come in summer to take advantage of the lion’s share of exploits, whether you prefer to canoe the glass-clear Lac Beauvert or attend a craft beer tasting. Don’t leave without having at least one spa treatment; we recommend the Honey and Ginger Body Elixir, a scrub that will leave your antioxidant-parched skin feeling brand new.

The Moment
There’s something about steakhouses with flickering fireplaces that feels so deliciously primal. But at Moose’s Nook Chophouse, nothing is staid or expected—not when the menu includes boar chops with pickled peach compote and summer squash noodles with pistachio charcoal crumble. You take another sip of your whiskey and order the inevitable: a sous vide Tomahawk with chimichurri sauce, duck fat brussel sprouts on the side. Mmmmm.
