For John Pritzker, heir to the Hyatt empire, insurrection came in the unlikeliest of forms: turning 500-acre Carmel Valley Ranch into an elevated dude ranch, with archery classes, trail rides at dusk and post-hike yoga overlooking Robinson Canyon. The original Pete Dye-designed 18-hole golf course just had a multimillion-dollar revamp. All room types come with travertine limestone gas fireplaces, soaking tubs and full run of the resort’s bocce court and two saltwater pools.
