What we think
The sprawling ranch in the foothills of Texas Hill Country has paddocks that stretch farther than the eye can see—make sure to say hello to the friendly (and mammoth) Percherons, Sampson and Monroe, when they come trotting up to the fence. A tree-lined path cuts between the pastures and ends at the main house. It’s here that the guests are fully immersed in Dos Brisas’s rustic luxury. Scattered over the property, the high-ceilinged Mission-style haciendas and casitas (there are 9 in all) are full of Southwestern art and patterning, their distressed leather couches pulled close to stone fireplaces. Enclosed patios have private pools. The property has dedicated 10 of its 300-plus acres to organic vegetable gardens and fruit orchards that produce 400 different crops throughout the year—the basis for gardening and cooking classes as well as the restaurant. A member of Relais & Châteaux, it’s considered by some the best restaurant in the Lone Star State.

By providing a truly exceptional experience through virtually flawless service, our award-winning approach to fine dining delights our guests time and again. Whether enjoying a multiple course Tasting Menu or Chef ’s Grand Tasting Menu, breakfast on your private patio, or a gourmet picnic lunch, our chefs artfully prepare meals that please the most discriminating palate. We have a passion for quality. Our approach uses an American flair for presentation, solid European culinary technique woven with Asian minimalist techniques and 25 acres of organically grown produce from our pitchforks to your plate. We are a gastronome’s dream.
In the beautifully appointed dining room you’ll find a grand fireplace from France’s Loire Valley region, circa 1760, as well as petite “Ritz” lamps on each table delivering an elegant and inviting glow. Custom made leather and richly upholstered chairs provide a rustic touch, as does the handsome bar handcrafted from alder and mahogany.
Menus are prepared daily and depend on what
is harvested from our gardens and green houses. Lunch menus usually will include three options for your choosing. For dinner, we offer prix-fixe menus, multiple-course tasting menus, or our Chef ’s Grand Tasting menu, which consists of 12 courses. Wine pairings are available for all menus and our sommelier will be happy to help you select wines to perfectly accent your menu.
About our Wines
The Inn at Dos Brisas approaches our wine cellar with a sense of responsibility to our patrons. Our cedar wine cellar is kept at a constant 54°F with 67% humidity; and can house a maximum of 8,000 bottles. Our wines wines vary in price, ranging from $35 to $7,500.
Casual attire is recommended for lunch services. For brunch and dinner services we encourage the gentlemen to dress in slacks and a dress coat. Our female guests are encouraged to adorn their dress with a pashmina or shawl.
Enjoy The Inn’s exquisite cuisine in the intimate setting of your Hacienda or Casita. All of our menus are created to showcase the vegetables and herbs from our renowned organic gardens including only the finest meat and fish sourced from around the world over. Guests have the option of front door delivery and service or through the Butler’s Privacy Pass.
Enjoy our Chef ’s Seasonal Specialty Creations at your own leisure, while enjoying the open acres of ranch life. Prepared in a picnic basket for easy travel and served with a picnic blanket. Includes a half bottle of wine. Giddy Up!
