What it is

A 16th-century property reborn as a showstopping retreat, with 67 colonial era-inspired rooms (each fitted with a balcony and fireplace), a serene pool and pampering Rosewood spa.

What it isn't

Feeling peckish. The four restaurants on the property range from a tequila bar with curated mezcal flights to a rooftop tapas bar (order the grilled ribeye tacos and get the churros with Bailey’s chocolate sauce for dessert).

What we think

Mexico doesn’t have a royal family, but if it did, they might live in a castle just like this hacienda, which is regal at every turn—and thoroughly Mexican. At Sense, a Rosewood Spa, you’ll find treatments inspired by the San Miguel de Allende region, including massages with arnica—a healing indigenous herb plucked from the surrounding foothills—and broom flower and honey sugar scrubs. Room options are no less royally relaxing, thanks to their movie-set worthy blend of carved antique furniture and textured neutral finishes. Even the “starter” Colonial Room is a whopping 570 square feet, with a covered balcony, deep soaking tub in the bathroom, fireplace and bed wrapped in Italian Rivolta Carmignani linens. It’s worth springing for the Parroquia Suite if you want to spread out even further: you’ll have 720 square feet of room to roam, plus a dual fireplace and a prime overlook of the famously pink Parroquia de San Miguel Arcángel church, built in the 17th century.
