What it is
An iconic Beaux-Arts building reborn anew as a 119-room boutique hotel.
What it isn't
Stodgy. Montreal design wunderkinds Borrallo Interiors made sure the interiors are as glam and high-gloss as could be, with sumptuous fabrics (velvets and satins galore) juxtaposed against clean-lined white spaces.
What we think
It’s no wonder the designers behind Hotel St. Paul opted for royal purple as the mainstay of their color palette: this place would pamper any sovereign sleeper. Even the “standard” room is anything but, with a deep soaker tub, Bluetooth-enabled sound-system and—we’re sure even Prince Harry gets a kick out of this—nightly turndown service. (If, upon checking in, you decide to cancel all plans, throw on the fluffy white hooded terry-cloth robe and order oysters, Quebecois cheese, and a bottle of Bourgogne Chablis from the all-day room service menu, we won’t judge).

The Moment
Rubbing elbows with locals on the terrace is so much more enjoyable when said locals are sipping wines expertly selected by star sommelier Philippe Poitras—exceedingly rare bottles among them. “What,” you ask the waiter, “pairs well with lobster risotto in lime oil?” As the lowering sun casts everyone in a captivating glow, you decide to go for bubbly. Tonight is worth celebrating.
