What it is

A new ultra-luxe spa resort deep in the Mayan jungle, centered on a hallowed cenote (a subterranean reservoir).

What it isn't

Campy. This is a clean-lined iteration of Mexico, with cloud white stone and glass walls.

What we think

We haven’t been to heaven yet, but we would imagine it looks something like this: an exultant, pampering reprieve surrounded by lush rainforest. For starters, rooms at Chable aren’t rooms at all—they’re fully-stocked casitas, complete with a private 377-square-foot outdoor pool, terrace for lounging, hammock, and an ethereal, spa-like bathroom with a double rain shower, plus tech amenities even angels would appreciate, like an iPad control system. Of course, you didn’t go boots-deep into this unforgettable jungle to stay locked away behind closed doors. The resort straddles a sacred Mayan cenote and treatments in the 32,000-square-foot spa are as reverent to the land as can be—you can have your body polished with chaya, a Yucatan native plant touted for its restorative power, or be wrapped in mineral mud scented with Indian tobacco. Adventurous types can go a step further at a temazcal ceremony, a shaman-led experience in a de facto Mesoamerican sweat lodge.

You're here because

You’ve grown exceedingly bored with standard-issue gym offerings on the road, and there is nothing standard-issue about this place. Among the courses offered on-site? Aquallet (just what it sounds like), water pilates and a slack line. (A real slack line, not that new app at work).

The Moment

You’ve heard rumors that chef Jorge Vallejo is among the best on earth—number 11 on the entire planet, to be exact. And no wonder; they make everything from Yucatan honey (from their own apiaries) to xoconostle and jamaica fruit jam fresh from the garden. One bite of your deer tartare with sour orange and chili habanero and not only are you looking well outside—you’re feeling well within. So sure, you’ll have dessert tonight. The cilantro sponge cake with charred pineapple and soursop sorbet, to be exact.
